Orange Olive Oil Cake (Vegan)
Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
¾ teaspoon sea salt
1 cup granulated sugar
½ cup fresh orange juice
½ cup olive oil
2 teaspoons vanilla extract
Zest of 2 oranges
Instructions
Preheat oven to 350°F. Lightly oil a 9-inch round cake pan and set aside.
In a medium bowl, sift together the flour, baking soda, baking powder, and sea salt. Stir to combine and set aside.
In a large bowl, whisk together the sugar, orange juice, olive oil, vanilla extract, and orange zest until smooth.
Add the dry ingredients to the wet mixture, and stir until just combined. Do not overmix.
Pour the batter into the prepared cake pan and bake for about 35 minutes, or until a toothpick inserted into the center comes out clean and the edges of the cake start to pull away from the pan.
Allow the cake to cool completely in the pan before carefully unmolding.
This cake is naturally dairy-free and egg-free, and it pairs beautifully with a dusting of powdered sugar, a citrus glaze, or a dollop of vegan whipped cream.
