This is such a neat recipe, and it's perfect for fall!
- 3 cups shredded carrots (about 1 lb.)
- 8 oz. (about 1 cup) pitted dates (you could also use raisins for a less expensive option- there's a recipe here for using raisins instead of dates)
- 1 cup raw walnuts
- 2/3 cup unsweetened shredded coconut
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- pinch of salt
- (optional) 1/2 cup raisins
RAW CASHEW VANILLA FROSTING INGREDIENTS:
- 2 cups raw
cashews, soaked overnight - 2/3 cup coconut
oil, melted - 1/3 cup water (use more or less to achieve desired consistency)
- 1/3 cup honey
- 2 tsp. vanilla extract
- 1 Tbsp. lemon juice
- pinch of salt
