INGREDIENTS:
FOR THE ASPARAGUS
½ lb asparagus
1 tbsp olive oil
salt and ground black pepper
FOR THE SALAD
1 cup cherry tomatoes — cut in half
½ medium red onions — sliced
1 cup yellow bell pepper — chopped
1 cup cucumber — chopped
1 cup Kalamata olives
1 tbsp feta cheese — chopped
FOR THE DRESSING
1 tbsp freshly squeezed lemon juice
2 tbsp extra virgin olive oil
1 clove of garlic — minced
Salt and fresh ground black pepper to taste
