We all know that we should eat more vegetables but sometimes that’s hard. This salad makes it easy and it’s tasty.
Ingredients:
5-6 large carrots, finely grated (about 4 cups grated)
1 shallot, thinly sliced
1/2 cup parsley, chopped
1/3 cup raisins
juice of 2 lemons (~1/3 cup)
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon coriander
pinch of cayenne pepper (~1/8 teaspoon)
pinch of black pepper
